Avocado Toast with Fried Eggs (ingredients, equipment, instructions)
Serves 2; Prep Time: 10 minutes; Cook Time: 15 minutes
Instructions:
1. In small bowl, whisk together 1 tablespoon oil, lemon juice, pinch salt, and pinch pepper.
2. Use butter knife to cut avocado in half. Separate halves, then remove and discard pit. Scoop avocado into bowl with lemon dressing; discard skin. Use fork to break avocado into large pieces, then mash into dressing until mostly smooth.
3. Place bread in toaster and toast until golden on both sides, 1 to 2 minutes. Spread avocado mixture evenly on toasts.
4. In 10-inch nonstick skillet, heat remaining 2 teaspoons oil over low heat for 5 minutes. Meanwhile, crack eggs into second small bowl and add pinch salt and pinch pepper.
5. Increase heat to medium-high and heat oil for 1 minute (oil should be hot but not smoking). Working quickly, pour eggs into skillet, cover skillet, and cook for 1 minute.
6. Turn off heat and slide skillet to cool burner. Let sit, covered, for about 1 minute for slightly runny yolks or about 2 minutes for set yolks.
7. Use spatula to transfer 1 fried egg to each toast. Serve.

Great beginner cookbook
This hardback book is made of great quality. The recipes are simple enough for my 12 year old to follow, yet very satisfying and tasty food. What a win. Instructions are step by step and very clear. Great pictures to view to get the over all idea of the finished recipe. My son made the monkey bread all on his own and let me tell you, it was INCREDIBLE. It built his confidence in the kitchen. We may have a new chef in the house. 😂 Great buy for a great price even!!!

Basic recipes with good directions and photos. I’d have loved to have had this helpful info when I was young and trying to learn to cook by myself. It was always a joy to surprise my mom with food on the table when she got home from work, even when just a grilled cheese sandwich (made in an old pie pan under the broiler) and a can of soup I’d opened and heated on the stove! The possibilities available in this book are a great beginning to open the imaginations of curious kids to tastes, textures, and the many rewards and confidence boost of good cooking!My only negative comment is the use of food processors and similar newer tools when a large bowl, a spoon or spatula, and some elbow grease worked fine as ‘food processors’ for centuries…insert eye roll here! Also, describing to the kids how to to separate an egg USING YOUR BARE HANDS was a completely new and approaching barbaric idea I had never heard of or even thought of doing, ick! When there are always two halves of eggshells to use from one to the other, why would anyone pour the raw egg in their hand to let all but the yolk then dribble through their fingers?? Aside from the convenient shells already in your hands, there’s also an easy kitchen tool called an egg separater, yes really, that could have been shown among the kitchen tools. Much easier, less gross, and all around cleaner. Otherwise, this book and the baking book for kids are mostly recommended, except they both provide these same glaringly bogus instructions for unsuspecting children. Hmmm, maybe that was the point?? 🤓

Great cookbook
I got this along with the baking book for my kids for Christmas. My 10 year old has tried a bunch of recipes and each one has turned out so well. He loves the challenge of trying to do it without asking for my help and the recipes are simple so he usually accomplishes his goal of making delicious food without needing help. Each recipe is simple and easy to follow and is laying a foundation of good, solid basics. Every time he makes something new his confidence increases along with his interest is cooking and baking. Even my 8 year old is interested in making food and she made a cheesy noodle recipe with very little assistance from her dad.

Best kids cookbook
I have looked into MANY kids cookbooks and this is the ONLY one I found that is a true cookbook (not that type of kids cookbook that is like “now use the cookie cutter to cut your toast into a heart, etc.” this has legitimate recipes that kids can make for the whole family. It teaches kitchen skills and health and safety tips. Nutrition information and balanced diet info also.

My 10 year of daughter loves this book and uses it often, especially when her friends come over. The recipes are well-explained, easy to follow, and fun for kids. Some ingredients are more common in the U.S., but we’ve had no problem finding substitutes. Overall, a great cookbook that keeps her excited about cooking!
